Serra only produce Vernaccia di Oristano. Their production is all in focusing on just 1 wine. They aim to perfection. Their work is founded on commitment and patience, waiting over 10 years before releasing their youngest wine.
We are in West Sardinia, near the sea in an area with lots of small rivers. The soil is sandy mixed with gravel and clay. This area used to be a seabed.
Serra Vernaccia di Oristano is vinified from old vines 50-75 years old bush trained with low yield just producing few grapes each plant.
The grapes are destemmed and gently pressed. Skin contact is short, just a few hours to allow fermentation to start. Fermentation is carried in concrete tanks then followed by very long aging on small chestnuts barrels for several years under flor.
When the wine is transferred into the barrel its alcohol level is around 14% then through the maturation process under flor because of water evaporation through wood become 17-18%
Vernaccia di Oristano is a peculiar oxidative wine out of any scheme. Similar but at the same time very different and with its own peculiarities compared to Vin Jaune, Vin Santo etc.
